Add Dividers / Sorting for Columns & Metrics in the Chart Builder

What is the problem or goal the end user is trying to solve or accomplish?

Currently in chart builder it can be difficult to sort through the available columns/metrics if you have large datasets

How are they solving it currently?

Create smaller datasets which can be less performant

What is the recommended solution by the Customer?
Add the ability to organize columns into categories, with an expandable dropdown and to pick a method of sorting the order the columns appear in
